Beef & Sausage Meat Loaf

1 lb ground beef

1 egg, slightly beaten

1 lb pork sausage

1 tsp salt

1/2 medium onion, chopped

1/2 tsp ground pepper

1/2 cup rolled oats

1 can tomato sauce

Combine all ingredients and place in loaf pan. Bake at 350 degrees for 60-70 minutes or until done.

Swiss Steak & Vegetables

1 1/2 lbs cubed steak

1/2 medium onion, sliced

2 tbsp shortening

4 medium potatoes, sliced

1/2 tsp salt

1 can tomatoes

1/4 tsp pepper

Place cubed steak in frying pan with melted shortening. Add salt and pepper. Cook over medium heat until brown, turning as necessary. Add remaining ingredients. Simmer for 30-40 minutes or until potatoes test done.

Chicken 'n' Dumplings

1 whole frying chicken, cut up

1 1/2 cups flour

1 1/2 quarts water

1/2 cup shortening

1 tsp salt

1/2 cup milk

Place chicken, water and salt in large saucepan. Cook over medium heat for 20-30 minutes or until done. Remove from heat. Remove chicken and de-bone.

Place flour in large mixing bowl. Cut in shortening. Add milk, using more or less until mixture is moist but hard to stir.

Reheat broth to boiling. Drop dough by tablespoonfuls into broth. Cook on low heat, stirring occasionally, for about 15 minutes or until dumplings are cooked through. Add deboned chicken and heat for five minutes more.

Beef Stew

1 1/2 lbs beef for stew

4 medium potatoes, cubed

1 can corn

1 can vegetable juice

1 can peas

1 tbsp Kitchen Bouquet

Brown beef. Place in large saucepan. Add remaining ingredients. Cook over low heat for one hour.
